The 24th entry in the Taiwanese Tea Research and Extension Stations catalogue is from centuries-old wild mountain parentsa distinct species with a unique morphology: long, linear leaves. Dubbed Shan Yun, the plant is naturally vigorous and well-adapted to climate change. Rife in amino acids while sparse in tannin and caffeine, Shan Yun is a smooth, soothing sipper.
