Sora – Japanese for sky – is a matcha that feels like a clear, calm morning in a cup. With a clean, simple flavour profile, its perfect for enjoying on its own or in a beautifully elevated latte.
This matcha comes from a fully shaded spring harvest blend of cultivars grown in Yoshiharu Matsushitas naturally farmed tea fields in Kakegawa, Shizuoka. Yoshiharu-sans family has been cultivating tea since 1915, and he avoids commercial fertilizers entirely. Instead, he hand-harvests wild mountain grasses, ferments them, and turns them into rich compost. This careful, hands-on approach creates tea that captures the true essence of the land – clean, vibrant, and pure.

Preparation
Usucha (thin tea): Sieve 2 heaped matcha spoons (2g) into a bowl. Add about 80ml of 70C water. Gently mix with a bamboo whisk (soak whisk in warm water first to prevent breaking), then whisk until a fine, thick foam forms. For a matcha latte, use less water and add to milk of your choice.
