Green Rooibos is an unusual form of Rooibos. Itis more of a newcomer to the tea scene, primarily to compete with the popularity of green teas. Typically, while processing rooibos, the leaf is oxidized and this alters its color to a deep red, however when making green rooibos, the leaf is baked and dried soon after it is harvested. The taste is smooth and herbaceous.
