In April our team had the pleasure of studying with the former processing champion of Taiwan, Mr. Liang. Liang is a treasure and we were fortunate to be imparted an iota of his skill and knowledge. Though we were enjoying the fresh and aromatic yields of the spring season, we commissioned an autumn harvest of Muzha-style Iron Goddess. Though its a matter of preference, autumn harvests are known for their superior mouthfeel to early spring. Using precise convection roasting, Liang elicits the fondest and most desirable qualities of Muzha in his productions: melding sugarcane sweetness with full toastiness, textured mouthfeel and a long-lingering fruit palate.
